Banquet Sous Chef

The Role

Reporting to the Executive Chef and Head Chef the Banquet Sous Chef will be managing the Banquet kitchen and in the role, you will:

  • Ensure adequate mis-en-place and forward planning in the Banquet kitchen;
  • Ensure that all staff adhere to standards in order to provide a consistent, high quality product for the guest. This includes the standardisation of all recipes and the final presentation of food items;
  • Actively contribute ideas and suggestions regarding new menus, recipes, and ways of improving consistency, product, revenue performance and the overall smooth operation of the kitchen;
  • Oversee all documentation completed by CDP’s (e.g. Ordering consolidation and ordering sheets);
  • Ensuring that food costs are maintained to meet the target set by the hotel.

Talent Profile

About You

  • Diploma in culinary is required
  • Deep understanding of culinary trends and the ability to implement them creatively
  • Previous experience in a fast-paced environment or in a 5 star hotel environment 
  • Excellent communication skills and leadership skills. 
  • Exceptional attention to detail. 
  • A thorough understanding about Food Safety and HACCP
