For the first time ever, Peppermint, the award-winning farm-to-table restaurant offering halal-certified buffet stations at PARKROYAL COLLECTION Marina Bay, Singapore, is pleased to present A Celebration of Southern Italian & Mediterranean Specialties, available from 10 April (Dinner) until 12 May 2025.

Led by Peppermint’s Chef de Cuisine Leon Yee and his talented culinary team, this vibrant buffet captures the essence of the region’s rich culinary traditions, from the deep, rustic flavours of Southern Italian comfort food to the fresh and zesty delights of Mediterranean fare. 

A Celebration of Seafood and Slow-Roasted Delights

Indulge in a seafood lover’s paradise with Pesce al Cartoccio (whole baked Mediterranean snapper) and Purpu alla Pignata (slow-cooked octopus), alongside hearty Slow Roast Carvery highlights such as Calabrese Beef Braciole—tender beef rolls braised in a robust tomato sauce—and other traditional meat items, such as Puglia Lamb Cutturiedde, a rustic lamb stew infused with aromatic Mediterranean herbs.

Live from the Open Kitchen and Timeless Italian Classics

Guests can watch as skilled chefs prepare Burnt Butter and Sage Pasta in a Parmigiano cheese wheel. Classic Italian favourites also make an appearance, from Neapolitan Pizza and Focaccia Barese with Salsa Verde to comforting Taranto-style Fish Soup and the hearty Pollo alla Cacciatora (chicken stew with tomato sauce).

Sweet Endings with Decadent Italian Desserts

No Italian feast is complete without decadent desserts. Conclude your dining experience with the velvety richness of Tiramisu Gateau, the citrusy delight of Delizia al Limone, and the warm, comforting flavours of Apple Crostata with Toffee Sauce

For a refreshing finish, indulge in our Lemon Gelato, complemented by Lemon-infused Urban Farm Herb Oil and Sea Salt.
