Nestled amidst the Forest Terrace is new signature restaurant Mosella, which will introduce a sharing concept of modern Mediterranean cuisine. The Beach Terrace will bring a resort-like experience to the heart of the city, and above, the Garden Terrace will be home to Florette, the Champagne & Oysters specialty bar. At the highest levels of the Cloud Terrace, level 18 will house Orchard’s highest pillarless ballroom, Claymore Ballroom.

The Role

The Chef De Cuisine will be responsible for the overall kitchen operations of our MOSELLA restaurant, serving modern Mediterranean cuisine.

Our Expectations:

  • Assist the Executive Chef/Executive Sous Chef in the planning and development of menus for the Restaurant and/or hotel, ensure the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration.
  • Manage labour and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control.
  • Ensure that sanitation standards are followed as well as the cleanliness and organization of the kitchen.
  • Maintain control systems which will assure quality and portion consistency, monitor food shipments to ensure they meet established purchasing specifications as well and foster an awareness of the importance of food preparation and quality.
  • Communicate with employees and managers to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation between departments.
  • Coordinate the selection, training, development, and evaluation of employees and managers in the Kitchen Department through effective management and leadership to ensure that established cultural and core standards are met, long-range strategic operational planning.
  • Train, guide and coach Team for operational efficiency and effectiveness and ensure transfer of knowledge and skills.
  • Assist the team with preparations of food items.
  • Assist the team with set-up and cleaning of operational areas when necessary.

Talent Profile

We are looking for a seasoned go-getter Chef with at least 8 years of experience, preferably as a Chef De Cuisine, specializing in Mediterranean, and/or French, Spanish cuisine. He should possess a diploma or a degree in hotel/restaurant management or culinary arts. He should be creative and have a keen eye for exceptional food presentation. We are looking for a hands-on Chef who is passionate about passing his skills and knowledge to the next generation of Chefs.
